Xenia's Berries Pudding

Ingredienten: Plain white bread (enough to cover the mould you chose).
750g mized fresh berries (raspberries, strawberries, blackberries, black currants and redcurrants). You need not have all berries, but the first three are essential.
2/3 cup or 150g sugar (but taste as you boil because sometimes berries might be more sour).
Voorbereiding: Remove the crusts of the bread.
Bereidingswijze: Place fruit and sugar in a heavy based saucepan (non stick/teflon), cover and cook very, very gently over very, very, very low heat for 5 minutes, stirring gently occasionally so the fruit juices flow. Do not leave it, keep looking and stir slightly. If it looks like it will stick, add very little water. Not too much or else it will be tasteless. Then allow it to cool.
Next, spoon the fruit into the pudding basin and lay the reserved slices of bread on top. Spoon any remaining fruit juice over, reserving 1-2 tablespoons for coating patches once the pudding is turned out. Next place a small flat plate on top of the pudding, making sure it sits inside the mould. Place weights or heavy food cans (about 1kg) on top to compress the pudding. Place mould on a large plate to catch any juices that may overflow. Refrigerate overnight. The final step is to turn pudding out onto serving plate carefully.
