2 tbsp (30 ml) Oil,
1 Large onion - finely chopped,
2 tbsp (30 ml) Patak′s Madras Curry Paste,
3 oz (85 g) Desiccated coconut,
2x15oz (2x425g) Cans mackerel fillets in brine drained,
cut each fillet in half,
2x15oz (2x425g) Cans tomatoes,
100ml Water,
Salt to taste

Fry the onion in the oil until soft, add the Patak′s Madras Curry Paste and coconut, fry on a low heat for 2 minutes or until the coconut has a toasted′ appearance. Add the fish pieces, tomatoes and water. Season, simmer until the sauce has thickened.
