Ingredienten:
2 ? cups full cream milk
2 ? cups cream
1 large block milk chocolate ? to be melted*
? cup cocoa powder ? to be mixed to a paste with milk
6 large egg yolks
11/2 cups castor sugar
1 cup chocolate chips
? cup crystallized ginger ? to be chopped roughly
? cup toasted hazelnuts ? to be cut into small bits
a few hazelnuts and crystallized ginger pieces for garnishing

Voorbereiding:


Bereidingswijze:
1. Place the milk and cream in a bowl and heat up over medium heat. Do not boil.

2. In a heatproof bowl, beat eggs and castor sugar, until frothy and thick. Place this bowl into a bowl of simmering water on low heat.

3. Add in the cream and milk mixture, melted chocolate, and chocolate paste, ginger and hazelnut bits, beating gently. Simmer for another 10 minutes, till the mixture coats the back of a spoon. It should resemble runny cream at this stage.

4. Leave to cool, and stir time to time to prevent from developing a crust. Freeze the mixture for about 1? hours or till half frozen. It may take longer depending on the quantity.

5. Once it is set, place it immediately in a mixer and beat it for about 30 to 40 seconds, and refreeze in a container with a lid.

*To melt chocolate


Chop the chocolates into small uniform pieces and place in a dry bowl. Boil a pot of water. (It would be a good idea if your bowl fits perfectly into the pot.) When the water is boiling, lower heat to its lowest and place the bowl of chocolate over the pot. You may place the melted chocolate bowl over the hot water (away from the heat) when you are using it.
