Ingredienten: 5 oz/2/3 cup/150 gr butter,1lb/500 gr. crabmeat,8 fl oz/1 cup/250 ml. red wine,11/2 tbsp wine vinegar,1 tsp thyme,41/2oz/11/3 cups 135 gr.fresh white breadcrumbs,2 hard-boiled/cooked egg yolks,sieved,1 tbsp capes,1/4 tsp ground mace,salt en peper,1 glove garlic,cut in half,0oz/250 gr.crab claws(for garnish),4 large or 8 small crab shells or individual serving dishes.

Bereidingswijze: Het recept is in het Engels gelaten, want met vertaling gaat er veel verloren van het recept zoals dit in 1600 werd beschreven.
1. Melt all but 2 tablespoons of the butter in a pan and add the crab meat,wine vinegar,thyme,breadcrumbs,egg yolks,capers,mace,salt en pepper.Cook gently,stirring occasionally,until most of the liquid has evaporated,about 8 min.Rub the crab shells or serving dishes with the cut garlic glove.For the garnish:melt the remaining butter,add the crab claws with a little salt en pepper and heat gently.When the crab meat mixture is cooked,taste it for seasoning,pile it in the crab shells or dishes and top with th claws.
