Kip Met Bourbonsaus

Ingredienten: 2 tablespoons unsalted butter
2 medium-to-large chicken breasts, cut in half and boned
= cup bourbon
4 to 6 shallots, sliced
= cup heavy cream
1/8 teaspoon nutmeg
< teaspoon white pepper
Voorbereiding:
Bereidingswijze: Serves 4.
Melt the butter in a large pan. Place the chicken breasts, skin side down, in the pan in which you have heated the butter, and quickly brown over high heat. Sprinkle < cup bourbon over the chicken and ignite it . Add the shallots and cook until the flames go out, then add the remaining bourbon. Cover the pan and cook over low heat for approximately 12 to 14 minutes, until the chicken is done. Transfer the chicken to a serving platter and keep warm. Defat the pan juices, if needed, then add the cream, nutmeg, and pepper. Simmer just until the sauce thickens. Pour the sauce over the chicken and serve.
